Asparagus &#8220;bavaroise&#8221; stuffed with Langoustine Tartare, topped with Country Side Bread Crouton Asparagus Brunoise and Salmon Roe, P\u00e9quillo Pepper Pur\u00e9e. 2. Seared Langoustine \u00e0 La Plancha, Tomato Concass\u00e9 and Cilantro Emulsion. 3. Langoustine custard, topped with Dill Espellette Pepper and Crouton. If this dish doesn\u2019t make you go WOW, I\u2019m not sure what will.
