Traditionally a northern Vietnamese breakfast specialty, Beef Pho is now eaten throughout the country at any time of day. And it has become one of the most popular noodle soup in San Francisco Bay Area, especially in Silicon Valley. Chicken Pho is coming in second, a perfect soup for a cold night or to cure a hangover; but don’t we forget our vegetarian/vegan fellows, vegan Pho has become so popular in the greenest state of America. We got you covered!

With almost 400,000 Vietnamese first and second generation live here in Northern California, and over 150,000 Vietnamese in the condensed populated Silicon Valley, no wonder when I want to get a good bowl of authentic Northern style Pho, San Jose is where I go first.

When I crave for Pho Tai Dap (literally mean hand-tenderized or hand-pounded rare beef Pho), and when my mother is too busy to cook, I come here for it.

They use the highest quality of beef USDA prime flank steak that I’ve ever seen at any restaurant in the US. The meat is tender, sweet, topping off with a bit of ginger and plenty of green onion, oh mine! They cook over 180 lbs of bone and bone-marrow just to serve you 200 bowls of beef Pho. There is no place like Pho Ha Noi San Jose serves this kind of Northern region Pho. And you order fresh noodles (wider flat rice noodle to go with it), Whoala, you have yourself a bowl of goodness gracious noodle soup!

The wife and husband team here are the most kind-hearted people I know. They have helped so many people in our communities here, from the recent wildfires in Sonoma and Napa Valley, to the hurricane Irma and Harvey; from the recent flooded victims in Central Vietnam to the recent wildfires in LA; just for that alone, they get my vote for their relentless philanthropy.

Another very authentic Pho place that quite popular in San Francisco.  They are famous for Pho Ga (Chicken Pho noodle soup). This is more noodle house than a restaurant but it is airy, bright and cleaner than when they first opened their 1st location in 2000. They do northern style Pho which is not as widespread as the usual southern Vietnam pho joints most people are familiar with.

If you come here be adventurous, try their Pho Gà Lòng (pho ga with giblets: heart, gizzard, liver, and other organs). They use free-range chicken and freshly prepared daily, you will be in for a treat.

The surrounding area is sketchy-ish but most of the time it’s fine to walk around during the day.

Pho Papa is a new place with light wooden tables and chairs, an unusual approach for a Pho place. They even offer few seats at the kitchen reminds me of some Ramen Bar. They offer a reasonable price, friendly, and good service. The broth is yummy, sweeter, darker broth, but not as sweet as typical Southern Pho restaurants in Silicon Valley and they give you plenty of garnish: bean sprout, basil, lime, and jalapeño.

Check out their spare rib bone soup on the side – tender, meaty, and falling off the bones goodness.

Sticky tables, obnoxious menu, hush and rush service, just your typical pho restaurant that gets it, and doesn’t care much about your average Yelp reviews.

Darker and sweeter broth, Southern Vietnamese style Pho, well-priced for this part of Oakland, the East Bay. You definitely get more for your bucks here. you can really stretch your dollar here at Pho King. The Combination Pho is what you go for, besides other dishes such as Bun Bo Hue, another popular dish here.

Don’t expect service here, but if you want a quick fix of piping hot broth and feel like rolling in Pho King in your Pajama, it’s OK too.

The place is always packed at lunchtime and during the full moon Lunar calendar for Vietnamese Buddhists to eat vegan food. The place is quite small, but the ambiance is warm and inviting. Plenty of exotic tropical flowers and plants decorated throughout the restaurant, Bird of Paradises remind me of Hawaii and always fresh plants here. So if you are allergic to plants and flowers, be careful. Gorgeous lightings at night, soft easy listening music, set you in a super Zen mood.

They offer Vegan Pho or Faux Chicken Lime Leaf Pho, they are both equally tasty, light broth, faux meat, tofu, green veggies, plenty of fresh veggies and herbs, surely satisfy your craving for healthier Pho.

Besides Pho, they have plenty of other delicious dishes for vegan/vegetarian to choose from, check it out.

We got to sit down and interview restaurateur Alex Chan this week. And we also got to try variety of the dishes, endless combination even for the pickiest eater. And if you can’t eat raw, they can can steam or bake the salmon for you. Sous vide chicken and Unagi are also on the protein list for you. Plenty of choices for vegetarian and vegan. All their sauces are gluten-free, no nut, and children friendly place.

DLM:  What inspired you to pursue this pokéLOVE restaurant concept?
Alex Chan: I have a sincere appreciation for all things food and wine.
pokeLOVE5Not counting Antarctica, I’ve traveled to 6 continents in search of the best food. Food is so much more than just 3 stars or 0 stars. I’ve been to best restaurants in the world, but I really don’t give a damn about ratings and stars.  Some of the best meals I have had are in night markets that would not pass any reasonable health inspections. But I’m cool with that. Food is so much more to me than stars.  It’s about sharing, about giving, about experiencing. Why did I start pokéLOVE?  Because I’m crazy about simple food, that is healthy food, that is really tasty.  And because what’s worth doing is worth doing RIGHT. My inspiration for pokéLOVE is create the very best poke experience by serving the best poke, with the best toppings and dressings in a fun place that is chill with a cool vibe. 
 
DLM: Do have a corporate chef to help you with creating the menu? Where have chef worked before?
Alex Chan: Our executive chef is Colin Long.  Colin graduated from pokeLOVE2the Culinary Institute in Florida. From Quattro at the Four Season’s in Palo Alto to Blowfish Sushi at Santana Row, Colin brings a unique culinary background in western and eastern flavors.  He has spent a lot of time sourcing fantastic ingredients and creating dressings that would fit in most fine dining restaurants. There is a purity and sincerity to the food he makes and to the fish that he cuts. The little details do matter to Colin. The subtle nuances of flavor, color and texture do make a difference. Even something as simple as our wakame (seafood salad), is locally sourced and has no artificial flavors or preservatives.
 
DLM: There’s quite a few poke restaurants popping up around the Bay Area recently. Do you think it’s an emerging trend now? Just like Boba drink or crawfish a few years back?
Alex Chan: It is emerging and it currently is a trend. Put good food is never trendy, good food is always “in” and the consumers move to healthy and nutritious food is not going to change.  pokéLOVE brings a unique fast casual dining experience that is exciting to this space.  Inevitably, the crème always rises to the top and some players will fall by the wayside. Our food, our vibe, our brand, our respect for our ingredients and our level of customer service is anti-trendy.
 
DLM: What’s your philosophy here and what set pokéLOVE different than the rest of the poke restaurants in the Bay Area?
Alex Chan: My motto is:” we don’t eat to live, we live to EAT!”  First and foremost, the food at pokéLOVE is so much different than other strip mall poke shops.  We give a shit about our ingredients and we treat it with care and respect.  The quality of our seafood is paramount.  We have taken great pains to source our seafood from some of the best purveyors in the Bay Area and around the world and we are the only ones to proudly offer Wild Isles Organic Salmon.  In addition to the extensive protein selection, customers can select from organic quinoa, organic farro, soba noodles, rice pokeLOVE1noodles, or even quinoa tortilla chips for their base. We offer our customers an unlimited selection of traditional and edgy toppings to build their own bowl, including numerous organic options.  We pickle all our pickled vegetables in house; including our pickled leeks, shiitake mushrooms, and daikon.  We make all our dressings from scratch utilizing natural ingredients and all out dressings are gluten free.  We don’t believe your food should have dressings that come out of a PUMP! At  pokéLOVE , we want our customers to let their creativity and tastes buds roam as we craft whatever they desire, in whatever combination they wish.  Our goal for every customer to help them find that elusive healthy balance of salty, sour, sweet, bitter, spicy, and umami in a fun, relaxed and chill atmosphere. 
 
DLM: What does sustainability mean to you?
Alex Chan: Sustainability to me means walking a fine line between eating what we want and giving a real damn about the environment and our oceans. At pokéLOVE, we source all our seafood from highly reputable vendors and we are able to trace the origins of everything we buy.  We have some wild items on our menu, but only when the item is in season and bountiful.  Our farm raised products come from some of the best seafood farmers in the world. In fact, our house salmon is from the Faroe Islands, long regarded as the benchmark salmon preferred by chefs around the world.  Beyond our food, sustainable also means to be environmentally conscious.  All our bowls and utensils are compostable or recyclable and nothing in our operations go to a landfills.  Even the garbage bags we use are compostable.
       
DLM:  How did you get to this restaurant business? What’s your background? Can you share with our readers?
Alex Chan: I was an accountant turned food dude.  After graduating from the University of Southern California, I was a Consultant at Price Waterhouse. I  eventually lost interest in bean counting, and became the Master Franchiser for Cold Stone Creamery in Northern pokeLOVE7California. I developed over a hundred units in less than 5 years.  A wine enthusiast, I jumped into the vino business and started Vintage Wine Merchants at Santana Row (“Best Wine Shop” – San Jose Mercury News Readers Poll).  A few years later, Vintage Wine Bar at Santana Row opened, serving up cabs by the glass, stinky fromage plates and became the “Hottest Wine Bar” in San Jose (METRO San Jose).  I’m also co-owner of several established independent grocery stores in the Bay Area.  I’m happily married to my crazy low maintenance college sweetheart, and has three beyond super cool kids.  
DLM: What do you for fun?
Alex Chan: When I’m not working. I love to get out on the hills and pretend that I’m in the Tour de France, play golf when my old-man shoulder does not ache, watch some USC football with the family, play Iron Chef at home, and will never turn down the occasion to have some good eats and a nice glass of wine with family and friends.
 
DLM:  You’ve emphasized community service in your career and through your restaurant. In addition to being active in many organizations?
Alex Chan: We are still evaluating which community and non-profit organizations we plan to partner with.  As a sign of how serious I am about giving back and being involved, 10 cents will to go charity for every bottle of water we sell. Community involvement is a core value of the company and we give damn about giving back to the local communities that we do business in.

Bite Silicon Valley Saturday’s Grand Tasting featured the food of celebrity chefs locally and around the country as well as the tasty wins kept on flowing. Guests got to see 3D food printing, which

Moderator Jordan Mackay explained why wine is an agricultural product unlike any other. How can technology improve both viticulture and vinification, particularly in drought years in California?

We got to see Tim Geistlinger, Ph.D. Vice President of R&D; Beyond Meat talked about the 100% plan- based meat, with moderator 2-beyondmeatSantosh Jayaram @SantoJay @Table8. Yellow pea is the protein based for Beyond Meat popular Beast Burger, which served at the grand tasting. @BeyondMeat on plant-based protein & a sustainable diet for the future. Tim Geistlinger also discussed on impacting the World with diet creating the future of protein with @BeyondMeat mission.

Later was chef José Andrés, ThinkFoodGroup, @chefjoseandres talked about believing in the power of food as an agent of change at Bite Silicon Valley. Investing in solution, finding the less fortunate Bite Silicon Valley 2015 043jobs, feed them with food, affordable food for all, and Chef Andrés’s goal is to help people. Before you help others, you have to learn how to help them right! Investing in the people, in your community, making a difference in our community, seems to be the message of chef José Andrés this entire conference.

He talked about poverty in the U.S. and around the world, as well as how we can be smarter on spending our money, return on our investment. We need to make sure we do not put people in misery. With technology from Silicon Valley, we can change that. Stop talking about what you do, start doing it, solve the problems with clean energy.

Now that the show was over, here are a few highlights of DAY 1 conference, from Bite Silicon Valley 2015, Dep Lifestyle Magazine team got to attend this past weekend.

On day 1:

We got to listen to opening keynote speaker, one of Time Bite Silicon Valley 2015 021Magazine’s “100” Most Influential People and awarded “Outstanding Chef” by the James Beard Foundation chef Jose Andres of ThinkFoodGroup. Along with Michiel Bakker, Director, Global Food Program, Google, Danielle Nierenberg, President, Food Tank, and moderator Dorothy Cann Hamilton, Founder & CEO, The International Culinary Center.

What Are You Doing to Enable The Planet to Feed 9 Billion People?

“Food is the most important energy. Food moves everyone. Food is not a problem. Food is a solution for us now and the future. How are we going to feed the 9 billion people? The rich & the poor are all interconnect. Food is lifting us up, not bringing us down. We need to use technology to solve food waste & to save the hungers. Food can change the world. And we are in the best place in the world to start that conversation NOW.” Chef Jose Andres was passionate about this as he always has been committed advocate of food and hunger issues.

He shared Google vision: “To inspire and enable the world to make food choices and use food experiences to develop more sustainable lifestyles and communities.” How can we help people to be at their best today, tomorrow and over the long haul through food (experiences)? And Google goal: “Move people to a balanced-plant-centric diet. And how do we increase appeal of plant-based proteins?”

“100% “nasty goods”, sell healthy food to kids, Robert Egger Founder LA Kitchen & DC Central Kitchen, said he is seriously thinking about branding it!

EndFoodWaste.org is the website and campaign created and managed by volunteer food waste activist Jordan Figueiredo.  In the world, 33% of our food is wasted while 1 in 7 people are food insecure and 10% of our human-made emissions come from the food we waste.  It is through the intersection of those issues, as the environmental and social challenges of our time that sparked the website motto “To End Food Waste, Hunger, and Climate Change. All at the Same Time.”  Bringing these 3 issues together provides greater awareness and inspiration as they are very well connected in problem and in solutions such as food waste prevention and food recovery, among other things.

“LA restaurants food waste is coming to an end. Profit should not food_bite_silicon_valleyleaving your community, and think of social responsibility, we should End Food Waste now.” Robert Egger. He mentioned that LA serves local food and keeps the money in the local community, especially for the public sector. Uncensored Egger added: “Could “Fuck Waste” be the “Got Milk?” slogan for Food Waste?” Then he gives us one of his best advise “First to follow, last can lead”, food can reveal that power that we all have!” More food ends up in landfills than plastic or paper and that’s fact.

According to the USDA, in 2013, 14.7 million or approximately 20 percent of children in the U.S. lived in poverty, that’s 1 in 5 children, how can we end food waste? And share ii with the less fortunate? How can food waste be such a big problem?

The Story of Loco’l – Bringing Restaurants to Food Deserts.

Bite Silicon Valley 2015 032Chef Roy Choi, who is celebrated for “food that isn’t fancy” and is known as one of the founders of the food truck movement. He shared with us Loco’l, his new fast casual concept aimed at food deserts, will be open later 2015 in Watts, a neighborhood in Los Angeles, as well as in the Tenderloin, San Francisco in the near future.  Chef Roy Choi is making a difference in our community 1 food truck at a time. “We’re bring the best motherfucker here to you, but they came from Watts, Tenderloin that culture, that life will change. I trust the intelligence of the public. We want to serve the public good food. They don’t need to know who we are (chefs). Culture, food, life, there is a whole landscape out there. It’s a journey, not to be adulty about food.” Uncensored chef Roy Choi, got the crowd cheering up for him.

“He brings his soul, his food, and his passion to the people. He’s amazing. He’s a hero.” Chef Jose Andres praised Chef Roy Choi in closing.

The Renewed Debate About GMOs

On the last discussion of the conference, Bite SV debated about the Bite Silicon Valley 2015 038controversial of GMOs, Dr. Robert Fraley, EVP and CTO of Monsato and Chef, TV Host, Farmer, + Vintner Michael Chiarello discussed about the need to feed a growing population and overcome adverse growing condition, what roll GMOs play.

“Without profitability there is no sustainability. The sufficient food, since 1980, the bad news is that 256% people are over nourished, we can re-distribute the calories from the over nourished to the under nourished. Decrease emotional calories, it’s all about calories distribution in our population, take us back to 1900.” Chef Michael Chiarello.

$15 an average meal cost for an American is about a week wage for 4 billion people in the world. This is fact from Dr. Robb Fraley. By 2050 we need to produce more food than ever before in history. We have to reduce and conserve to feed the population, and we need to be able to do it all facing the climate change, together we can.

“I wake up every day for the last 35 years, thinking what I leave for dr_robert_fraley_chef_chiarellomy kids. That’s what thrive me. Innovation in food is what we do.” Dr. Robb Fraley. Collaborating for change: discussed how Monsato broadly licenses technologies around the world to help farmers. GMOs panel talked about Hybridization and genetic modification are the same thing; the difference is the warp speed.

Audiences asked what would Dr. Robb Fraley do different if he could. He replied: “I would start with the trust by the consumers, that’s how I would start over.” IN the end, an interesting point Dr. Robb Fraley stated that not only Monsato a_chef_jose_andresagainst GMOs labeling because only 5 percent of food that needs it; but the public also voted down on this proposition 37.

In closing of the conference Day 1, the speakers and the audiences all agree that we need to reduce, conserve, and little by little than nothing at all.

When I crave for Banh Canh Cua, and my mother too busy to cook, I come here for it. One of my childhood memories that I vividly remember how my grandma cooked this delicious bowl of Banh Canh Cua, each time I got a cold. It’s a dish originated from Northern Vietnam where my grandma from. Forget about Pho Ga (Chicken Pho noodle soup), I want a bowl Banh Canh Cua. Banh Canh Cua came to my rescue as a perfect hangover noodle soup, this slippery udon-like noodles, I can just slurp it till the last drop of the thicken savory broth.

banh canh       Banh Canh is literally translated to Soup Cake. Banh Canh Cua is  #1 on their menu, they use a thick Vietnamese noodle, similar to Japanese udon, that can be made from tapioca flour or a mixture of rice and tapioca flour, serve in thick broth of pork and bone, serves in the big bowl of noodle soup with crab meat, pork, topping with spring onion, scallion, cilantro; serves on the side of bean sprout, lime, and chili. When Dungeness crab is in season, they serve the whole crab legs for you. My mouth is watering just think about it now. Truong Thanh Restaurant serves it best in the Bay Area. Don’t tell my mother, that I prefer this place, it’s as good as my grandma used to make for me.

VUNG TAU Restaurant is the most consistent Vietnamese restaurant in the Silicon Valley. After so many years, this is still the most successful family runs Vietnamese restaurant around town. Every time we have relatives visiting from out of town, my mom would take them here.

Hu Tieu            The majority of the dishes here at VUNG TAU Restaurant are on point in flavor, taste, and authenticity. Dinner serve in family style to share but I love to take some of my non-Vietnamese clients here to showcase the food I grow up with. And one of my favorite dishes here for lunch, is “Hu Tieu Ba Nam Sa Dec”, a dish originated from Sa Dec City, Dong Thap Province, Mekong Delta of Southern Vietnam; Ba Nam literally means Mrs. #5, it’s a common for the Southern families to call their children by the birth order, rather than their names. This glass noodle (Mung Bean) with pork bone broth serves on the side (dry style); the glass noodle is topping off with jumbo prawn, crab claw, ground pork in tomato sauce & a crispy fritter shrimp cake. Serves with a side of beans sprout, lime, and chili, mix everything together, you have a bowl of Southern Vietnamese goodness.

Inconveniently located inside the Lion Plaza Food Court in East San Jose, CA, It can be tough to find a table here at lunch time and sometimes or weekend. However, Pho Ga Hung offers better Pho Ga chicken noodle soup than most Pho places around Silicon Valley. But don’t let the restaurant name fools you, PHO GA HUNG offers a whole lot more Northern Vietnamese dishes than just Pho.

1 of the dishes that I love to eat on a raining day, the kind of comfort food, noodle soup that I can only get at home in my mom’s kitchen. I find it here at Pho Ga Hung, their special noodle soup Bun Moc. This underrated light noodle soup is very popular in Ha Noi, Vietnam, while most of us are familiar with PHO, and maybe BUN BO HUE; this noodle soup is hearty and much lighter than other ever popular Vietnamese noodle soups.

bun moc        This rice stick noodle soup made from a pork bone, pork base, and dried shiitake mushroom broth. The meats are mainly Vietnamese ham/pork sausage – “Cha” (similar to spam), the steamed one wrapped in banana leaves & broiled, the fried ham, and the cinnamon ham, and raw pork sausage mixed with dried shiitake mushroom, serves as meat balls in the broth; serves with a side plate of fresh herbs, and shredded water spinach (Ong Choy), when it’s in season, fresh chili, and lime. This noodle soup is so delicious and somehow, it’s forgotten in most of Vietnamese restaurants in Silicon Valley. If you are dare to venture out of your comfort zone, try this noodle soup and I’m sure you will fall in love.

Canh Bun Crab & Shrimp Noodle Soup

Another popular Vietnamese in East San Jose, CA, COM TAM THANH restaurant is specialized in “Broken Rice dishes,” but they also offer many authentic dishes from Northern Vietnam. This family runs has been here for almost 2 decades. I love seeing the owner, in her late 60s, she’s always at the cashier, beautifully make up, and has a biggest smile greeting you in Vietnamese. She’s one of the hardest working women and she makes killer dishes like this Canh Bun soup here, that there is no competitors can come close.

Canh Bun       Canh Bun is quite similar to Bun Rieu, a Northern Vietnamese rice noodle soup with tomato based but serves with thicker rice noodle, almost like the noodle in Bun Bo Hue. The broth are from pork, shrimp, and crab based, accompaniments with fried tofu, congealed pork blood, shrimp paste, and steamed water spinach (Ong-Choy), chive, chili and lime. The crab meat smashed in with shrimp paste then combines with eggs, it becomes fluffy, and it melts in your mouth when you eat it. If you love seafood, tangy, and hearty flavor, try this special dish.

Bun Bo Hue Spicy Beef & Pork Noodle Soup

            The restaurant name says it all: BUN BO HUE AN NAM. Unlike bun bo hueany other Vietnamese Restaurants in San Jose, Bun Bo Hue An Nam only serves this 1 dish, and they serve it real well, even the infamous chef Andrew Zimmern from the TV show “Bizarre Foods with Andrew Zimmern” had praised his visit here. Hue city is famous for all the spicy & tasty dishes in central Vietnam and Bun Bo Hue is a very popular dish here for foodies in Silicon Valley.

My best friend Coco’s family is from Hue City. She cooks Bun Bo Hue for me once or twice a year, if I get lucky, and she cooks with a lot of love. This dish reminds me of her, colorful, beautiful, spicy and full of flavor, just like her. She taught me how to make it, but it would take me a whole day to make it. So Bun Bo Hue An Nam is my best bet in the Bay Area. This spicy Hue noodle soup serves with pork leg, pork, beef, congealed pork blood, in spicy lemongrass and shrimp paste tasty broth, that has been shimmering for half a day with beef bones, beef shank, oxtail, pork knuckles; then pour this broth over the tick rice noodle, topping it off with Hue ham,  coriander, green onion, and onion. Serves with banana blossom, mint, basil, bean sprouts, lime, and add a little sate chili to the broth, bring out the best flavor in all. If you love spicy, this is a must try for you.
